Peanut Butter Balls

Note from recipe contributor Joni Marie Newman, author of Vegan Food Gifts: “Who doesn’t love peanut butter and chocolate?  These balls take a little more time to make, but the result is not only a great gift, but a delicious one as well.”

1 cup (256 g) no-stir creamy peanut butter

1 cup (120 g) powdered sugar

1 (12 ounce, 340 g) package vegan chocolate chips

16 toothpicks

parchment or waxed paper

baking sheet

In a medium mixing bowl, knead together peanut butter and powdered sugar until a nice smooth dough is formed, like the consistency of Play-doh™.  You may need a little more or a little less sugar depending on the moisture content of your peanut butter.

Measure out about 1 tablespoon (21 g) of dough and roll into a ball.

Place on a baking sheet lined with parchment paper.

Replace with remaining dough to make 16 balls.

Place a toothpick into each ball. Place in the freezer to harden. (This step makes it easier to dip them into the chocolate.)

While balls are freezing, melt your chocolate in a double boiler.

Once chocolate is melted and balls are stiff, dip each ball in chocolate to coat, and return to the baking sheet.

Repeat with all 16 balls.

Carefully remove toothpicks.

Using the flat side of a butter knife, carefully smooth over the hole where the toothpick was removed, adding a swirl design if desired.

Once completely cooled and hardened, package in candy sized baking cups and place in a truffle box.

Yield: 16 truffles
