Chickpea Fondue

Who doesn’t love fondue?  This simple chickpea based version from our friend Sara at Prepgreen is the perfect thing to throw together when company is coming.




2 cans chickpeas, rinsed and drained

2 c unsalted vegetable stock

1 garlic clove

½ c roasted red peppers

1 t paprika

1 t white miso

2 T olive oil

1 T tahini

2 T lemon juice

½ t salt

optional: 2 T nutritional yeast

For Dipping

4 c baguette cubes

2 c grape tomatoes

2 c cucumber slides


In a food processor or high-speed blender, combine chickpeas, vegetable stock, garlic, peppers, paprika, miso, olive oil and tahini. Process until smooth. Transfer to a medium saucepan.

Over medium heat, heat chickpea mixture and stir in lemon juice and salt. Stir in optional nutritional yeast, if you like. Serve hot.
