Anything Goes Fruit Filled Muffins

Heaven knows … anything goes!


2 cups (200 g) flour

12 tsp salt

3 tsp baking powder

12 cup (100 g) sugar

egg replacer (to equal 2 eggs)

14 cup (60 mL) oil

3⁄4 cup (180 mL) sour non-dairy milk (add 1 tsp vinegar to non-dairy milk)

1 12 cups (130–150g) “Anything Goes” fresh or frozen fruit (your choice)


Preheat oven to 350°F (180°C).

In a large bowl, stir together flour, salt, baking powder. Add sugar, egg replacer, oil, sour non-dairy “milk” and fruit. Stir together until “just mixed.”

Scoop into lightly oiled muffin tins and bake for 35–45 minutes (use a fork to see if done).

YIELD: Makes 12 large muffins.
