Slow Cooker Sweet Potato Chili

Yield: Serves 8

Ingredients

1 yellow onion, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

2 small sweet potatoes, peeled and cut into 1/2-inch pieces

3 cloves garlic, minced

2 (15 oz) cans black beans, rinsed and drained (the recipe authors suggests Kroger brand)

2 (15 oz) cans red beans, rinsed and drained (the recipe authors suggests Kroger brand)

2 (15 oz) cans diced tomatoes (the recipe authors suggests Kroger brand)

2 cups vegetable broth (the recipe authors suggests Kroger brand)

3 tablespoons chili powder

2 tablespoons ground cumin

1 teaspoon paprika

Salt and black pepper, to taste

Toppings-chopped green onion, avocado, and tortilla chips, if desired

 

Directions

In a 4- to 6-quart slow cooker, add the onion, peppers, sweet potatoes, garlic, beans, tomatoes, broth, chili powder, cumin, paprika, salt, and pepper. Stir to combine.

Cover and cook until the sweet potatoes are tender, on high for 5 to 6 hours or on low for 8 to 9 hours.

Serve the chili warm with green onion, avocado, and tortilla chips, if desired.
