Mini Apple Hand Pies

What could be cuter than these portable, hand-sized pies?

1 cup (150gr) flour

1 tbsp sugar

pinch of salt

1/2 cup (110gr) vegan butter*

1/4 cup (50ml) cold water

*cut the butter in small cubes and place in the freezer while prepping the rest of the ingredie


FILLING: one apple – a few tbsp of cane/coconut sugar mixed with cinnamon, quantity to taste



Make the dough: combine all dry ingredients in a bowl. Add the butter and knead it into the flour mixture using your fingertips, until no large clumps of butter are left. Add the water and stir it into the dough using a spatula, until the dough has a good consistency.

Wrap dough in plastic and place it in the fridge for at least an hour.

For the filling: cut the apple into quarters and slice into small slices. Combine the sugar and cinnamon.

Also take a small bowl of water to wet the edges of the dough so it sticks better.

-Preheat oven to 180C. Line a baking sheet with baking paper.-

Assembly: take the dough out of the fridge and roll half of it out over a floured surface until a few mm thick. Cut about circles out of it using a circular cookie cutter or glass.

Place the circles of dough on the baking sheet.

Turn some apple slices around in the sugar-cinnamon mixture and puzzle them on the circles, leaving a small cm free around the sides. Slightly wet the edges of the circles.

Roll out the rest of the dough and cut circles out of that as well. Place the circles on top of the apples and press on the edges using a fork, to close the dough with apple in between.

Cut a small cross in the top to let the damp escape while baking.

Put in oven and bake for about 30 minutes, until golden brown.
